Smoked alderwood is a bit acrid in my opinion. I use a mortar and pestle to combine it with regular sea salt and the pricey applewood bacon smoked salt to come up with a custom mix that is milder, yet won't get lost in soups and stews. Should last awhile if you "water it down".
